Homemade Tomato Ketchup

If you like ketchup, this is a nice recipe to try. Organic tomatoes, spices… and you’ll be able to do a wonderful sauce for your grilled  vegetables, chips or simply on some just baked bread!

I love it!

700 g ripen red tomatoes
1 small fennel
1 branch of celery
1 fresh chilly
1 spoon of grind coriander (or a pinch of coriander seeds)
1 red onion
2 garlic cloves
Salt/pepper
5 spoons of balsamic vinegar
5 spoons of olive oil
70 g cane sugar
7/8 leaves of fresh basil
1 thumb-sized piece of fresh ginger

Place all the vegetables in a large saucepan. Season with the pepper and salt, cook gently for 30 minutes and then add 300 ml of cold water, cook for 15 more minutes, until the sauce reduces by half. Then whiz the sauce with a hand blender… et voilà! Spoon the ketchup into sterilized bottles, then seal tightly and place in the fridge until needed!
