Punjabi Curried Beans & Lentils

I tried a new recipe from The Vegan Indian Cooking by Anupy Singla, I used my slow cooker and the result is absolutely delicious. The original recipe asked for Lima Beans, which I don’t find here in Paris.. they look like huge white beans…but I’m too far from a big store and I had a nice pack of organic beans and lentils waiting for me…. 🙂

500 g of lima beans …or beans and lentils, washed (they were left in a bowl with cold water for 3 hours)
1 medium tomato, diced
1 inch ginger root minced
2 cloves of garlic, minced
1 serrano chile, chopped
3 cloves
1 teaspoon of cumin seeds
1 spoon of sea salt
1/2 teaspoon turmeric powder
1/2 teaspoon of garam masala
1.6 L of water

Put all the ingredients in a slow cooker for 5 hours. Serve over basmati rice with naan…
