Red Pesto is a fantastic pesto recipe you can use with your pasta or spread on a slice of roasted bread. You can dip your freshly sliced veg in it (carrots, celery, cucumbers…) or just enjoy it on a leaf of lettuce…
40 g dried tomatoes preferably unsalted
25 g pine nuts
1 clove garlic
20 g olive oil
1 small spoon nutritional yeast
1 small spoon of sugar
Salt if needed
Put the garlic clove in the microwave for 1 minute, then skin it an take away its ‘soul’, the green part you see inside the clove.
Blend together all the ingredients together with a coffee cup of almond milk or more if necessary. The result must be a smooth paste. Taste and adjust with salt and sugar if needed.
