We’ll, it was a huge success! Not only my husband had 3 in a raw thinking they were “normal” muffins, but my birthday goblin was enthusiastic! I think cooking for the people you love is one of the most rewarding thing ever!
Here comes the recipe!
200 g black chocolate
50 g organic margarine
1 tbsp pure vanilla essence
1/2 tbsp salt
110 g almond milk (or any vegetable milk)
100 g pure apple juice
1 1/2 tbsp baking powder
70 g sugar (I used unrefined organic brown sugar)
200 g Flour
Preheat oven: 175*C and line a pan with paper muffin cups.
Melt chocolate and margarine in a microwave, do not overheat or you’ll burn your chocolate.
In a large bowl mix melt chocolate, milk and apple juice, add sugar, salt and vanilla extract. When the mixture is well blended. Add flour, little by little till the mixture is like a homogeneous thick cream. Maybe you’ll need less than 200 g. Last but not least the baking powder!
Spoon the batter into the prepared muffin cups, filling each about 3/4 full. Sprinkle each muffin with sugar pearls.
Bake for about 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean. Allow the muffins to cool for 10 minutes before transferring them to a wire rack to cool completely.
