I’m very proud of these cookies, they are not perfect but the dough looks very similar to the real pâte sablée and I’m sure it marries well with jams and fresh fruits!
300 g organic flour
150 ml maple syrup
75 ml Organic sunflower oil
1 pinch of salt
Some grated lemon zest (1 lemon)
Using the paddle attachment of your electric mixer, beat together all the ingredients until just combined. The result must be a smooth dough that detaches easily from your mixer. Add a few drops of vegetal milk if needed.
Form the dough into a ball shape, wrap it in plastic wrap and chill for 1 hour. Preheat the oven to 175*C.
Roll out the dough to 0,5 cm thickness, and cut out the sables using a cookie cutter. Bake on baking sheet for 15 minutes, or until they are lightly browned around the edges. Cool the sables for a few minutes on the cookie sheet and then transfer to a wire rack to cool completely.
