Spicy Pistacchio Rice


I prepared this rice a couple of days ago for dinner. I needed something easy to do, but a bit fancy cos I had unexpected guests.

300 g whole basmati rice, boiled and already salted
1/2 tablespoon curcuma
1 tablespoon garam masala
1/2 tablespoon dried cilantro
1 teaspoon mustard grains
Juice of 1 orange
30 g pistachios
2 small fresh onions – minced
1 garlic clove- minced
1 & 1/2 table spoon olive oil or vegetable oil

In a bowl mix the spices, the minced onions and garlic + oil and orange juice.
As soon as the rice is cooked, drain it in a colander and put it back in the pan and put the pan back on medium-high heat. Add the spicy orange juice and stir-fry the rice for about 3/4 minutes. Remove the pan. Last but not least add the pistacchios and mix well for 30 seconds and serve straight!
