Blueberry soft cake

It’s a very simple vegan cake I really love, I often use the dough to do little muffins, with black choco chips inside.

125 g cup Sugar
210 g flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon Salt
120 g vegetable oil
1 tablespoon raspberry vinegar
1 1/2 tablespoon vanilla extract
100 ml water
blueberries (I used 100 g fresh blueberries)
Preheat oven to 175°

Grease and sprinkle a cake pan (which – as you can see in the picture – I didn’t have, because my wonderful hubby decided to put order in the kitchen and forgot where he put my “ready to use” pans and moulds…is it a sign?)
In a large bowl combine sugar, flour, baking soda, baking powder and salt
In another bowl combine vegetable oil, vinegar, vanilla extract, and water, mix well
Pour wet ingredients into dry and mix well.
Pour cake batter immediately into pan, add the blueberries, sprinkle the top with some brown sugar and bake for 40 minutes or until a toothpick inserted in the center of the cake comes out clean !
