My First Cereal Bars


My goblins love cereal bars and these ones are so easy to do, crunchy, spicy end also healthy. I enjoy preparing them with my kids.
I found the original recipes on The Daily Green but I changed the recipe a wee bit…

120 g almonds
150 g nuts and seeds (sunflower, sesame, pine nuts…)
80 g dried cranberries
200 g rolled oats
100 ml brown rice syrup
110 g brown sugar
1/2 tsp. salt
1 tsp. vanilla extract
1 tsp. ground cinnamon
1/2 tsp. freshly ground nutmeg
pinch ginger

Preheat the oven to 180°C Spread the almonds, nuts and seeds on a cookie sheet and toast them in the oven for 6–8 minutes, or until they start to brown a bit.
Mix the oats, cranberries and toasted nuts and seeds in a big bowl.
In a small saucepan, heat the sugar/syrup, salt, cinnamon, nutmeg, ginger and vanilla extract over medium-high heat, stirring to avoid burning. Once the syrups come to a light boil, continue to cook for an additional 3–5 minutes until the syrup begins to thicken, then pour it over the oats and nuts/seeds. Mix everything together so that the sugar evenly coats everything in the bowl.
While it’s still warm, pour the contents of the bowl into a baking dish. Using a rubber spatula, pat everything down so it’s nice and compacted.
Cool to room temperature. Cut them into square or rectangles as you please.
