Cashew Cheese Stars

Cashew cheese is very easy to prepare and absolutely amazing. You can put it in a sandwich, use it as hors-d’oeuvre… (as I did, look at the picture below) and change its taste/color, making it more or less strong, red or white…again, you just have to let your personal taste drive you and make your own favorite “cheese”.

I used gomashio, raspberry vinegar and salad(rocket salad and lamb’s lettuce) to dress my cashew cheese.

If you want to prepare your own cashew cheese the Ingredients you need are the following:

375 ml water
3 spoons agar agar powder

250 ml water
250 g cashew nuts
1/2 tbsp salt
4 tbsp nutritional yeast
2 tbsp lemon juice
1 tbsp oil

Fresh herbs, garlic, onion, paprika, chili powder…(I used garlic, 2 tsp paprika, fresh herbs).
NB: if you prefer you can use vegetable milk instead of water!

Finely grind the cashews in a food processor together with 250 ml water (or veg milk). Add the nutritional yeast, your herbs and spices, salt and lemon. Pulse again to blend in the last ingredients.

In a medium saucepan bring 375 ml water (or vegetable milk) and oil to simmer, then add agar-agar powder. Decrease the heat to medium-low. Simmer for 3/4 minutes, stirring continuously with a wood whisk until the agar is dissolved. With the food processor running, gradually pour the water mixture into the cashew mix. Blend for 2/3 minutes, or until the mixture is very smooth and creamy.
Transfer the cheese to a silicon square mould (or round…), cover and refrigerate until it is firm, about 4 hours.

Agar agar is a natural gelatin, with no taste. It’s 80% fiber, and contains calcium, iodine, phosphorous and iron. It has no calories, sugars, fats or carbohydrates.
