And if you want to give it a try, here’s the recipe! Do remember that this delicious bread takes time to prepare. With this recipe you’ll have 4 breads of 500 g each (more or less). I cut my breads in 2 and freeze them, to have them for the whole week.
25 g fresh yeast
1.5 kg organic flour (try different ones)
300 ml + 600 ml lukewarm water
Day 1 (evening):
15 g fresh yeast mixed in 300 ml lukewarm water
Crumble the yeast into a large bowl, then pour over the water and stir until the yeast has dissolved; add 500 g flour, mix until a smooth and elastic dough forms.
Place into a warm place till the day after (covered with a wet cloth).
Day 2 (early afternoon):
15 g fresh yeast mixed in 600 ml lukewarm water
Crumble the yeast into a large bowl, then pour over the water and stir until the yeast has dissolved; add the dough of the previous day and 1kg flour, mix until an nice elastic dough forms (it doesn’t have to be sticky!).
Place into a warm place for a couple of hours (covered with a wet cloth).
Turn your oven on (200*c)
Shape 4 round loaves of bread (or baguettes …). Put them on a bread pan, covered with oven paper, cover the loaves and as soon as they start rising put them in the oven for -more or less- 30 minutes. They must be golden, top and bottom.
