Here’s the picture of one of my Viking’s birthday cakes (I did one small crumble per guest), an apple crumble revisited recipe that works fine even with pears!
100 g of organic black chocolate chips
4 organic cooking apples
4 big tbsp organic sugar
150 g organic plain flour
75 g butter
4 tsp maple syrup
Juice of 1 organic lemon
25 g toasted pine nuts
Preheat your oven at 180*C.
Peel, core and chop your apples into small chunks (1/1.5 cm). Place them in a mixing bowl, add the juice of one lemon and mix well (it will add a nice back-taste and prevent them from turning orangish). Add the pine nuts, the chocolate chips and the 4 spoon of sugar and mix again.
Grind the almonds in a small mixer.
Place the flour, the almonds and the margarine in another bowl. Use your hands to mix everything together until the mixture resembles large breadcrumbs.
Divide the apple mixture placing it in 4 small oven porcelain pans, cover the apples with the crumble mixture evenly divided. Add one small spoon of maple syrup on top of each pan.
Place the pans in the oven for 40 minutes or until crunchy and golden (when you notice the candied apples on the borders of your pans, it means they are ready)
