Quinoa & Cracked Wheat With Cashews & Almonds

Quinoa, cracked wheat, curry, onions, mustard and vegetables! A complete meal in just one plate! And what a lovely smell in my kitchen…;)

INGREDIENTS:

juice 1 lemon
80 g quinoa
80 g cracked wheat
3 tbsp olive oil
1 tbsp curry powder
1 tbsp mustard seeds
1 red onion, diced
180 frozen carrots and sweet peas (or fresh if you have them)
A wee bit of dried red chili pepper (do not add 1 unless you want a very hot dish)
50 gr cashew and sliced almonds
500 ml boiling water
salt

In a pan dry roast the quinoa and cracked wheat for 5 minutes.
In another pan, heat the oil, add the mustard seed and cook them for more or less 1 minute. Add the curry, onion, peas and carrots and chili bite. Cook for 5 minutes, let the frozen veg defrost and the onion should get lightly brown.
Add the quinoa, cracked wheat, almonds, cashews and salt. Mix all the ingredients well.
Reduce the heat to low and add the boiling water, slowly, to the ingredients. Cook till all the water is absorbed.
Turn the heat off, add the lemon juice and wait 10/15 minutes before serving.
