Stir Fry Dinner

I think I read somewhere that the secret of stir fries is not to put too many vegetable in your wok, and I guess it’s true, if you put a lot of greens they sort of fade, instead of “fry”. Sir fry can be a complete dish, according to what you add (tofu, and you can add slices cubes of tofu to my recipe as well!), they are always tasty and so quick to prepare!
1 clove garlic, crushed
2 shallots, thinly sliced
4 handfuls baby spinach
a few mushrooms, sliced
1 cup sweet peas
4 or 5 broccoli heads sliced
1/2 cup cashew nuts
1 tbsp olive oil
2 teaspoons soy sauce
sesame seeds, to sprinkle on top (optional)

Heat well your wok until and then add the olive oil. Add the sliced shallot and stir for a few second. Put all the vegetables and cashew nuts in the wok and keep them moving with a spoon, turning them over every few seconds.

As soon as the vegetables begin to soften, add the soy sauce. Keep on moving all the veggies for 30 seconds (max 1 minute) and your stir fry will be ready! If you want you can sprinkle over some sesame seeds before serving. 🙂
