Chickpea Crackers


– 250 grams of canned chickpeas (drained)
– rice flour (enough to make a hard homogeneous dough)
– 2 tbsp olive oil
– 1 pinch of salt
– 1/2 garlic clove minced
– 1 tbsp dried herbs (basil, thyme, oregano…)

Mash the chickpeas well by hand or in a food processor, then add the oil, garlic, herbs and salt and mix well. Add the rice flour little by little, enough to make a homogeneous dough. Roll the dough between two greaseproof papers as thin as possible and cut into desired shapes.
Bake in a preheated oven at 170°C till golden and crisp.

They are delicious!
