Lemon cookies

Cookies again, baked for some unexpected guest who came for tea. They are already finished…

Ingredients
1/2 cup margarine (room temperature)
1 cup organic withe sugar
1 tsp salt
1 tsp baking powder
Juice 1 organic lemon (fresh)
Zest 1 organic lemon (fresh)
1 tsp egg replacer
1 1/2 cup all-purpose flour
A huge lot of “strawberry flour” aka powdered sugar (it’s a long story…)

Preheat oven (170°C). Mix well all the ingredients in a mixing bowl (as for a normal pâte sablé). Your dough must hold together without being wet or sticky.
Make little balls (like a nut) of dough and place them onto a prepared cookie sheet. Bake about 10 minutes, or until slightly golden brown. When your cookies are cold powder them with sugar and enjoy! 🙂
