Nutritious and delicious!
70g Unsalted Sunflower Seeds (roasted)
10 cashew nuts
1 red pepper (jalapeño, mild)
Lemon Juice (1 lemon + 1 lime)
2 tbsp Water
2 tbsp tomato sauce
2 tsp minced chives
1/4 red onion
Add the sunflower seeds & cashew nuts to a food processor and turn it on. While it’s still on, add the oil and lemon juice and zest. Slowly add in the onion, pepper, chives and water until a smooth, creamy texture is formed.
Put the spread into a bowl pour in the tomato and the soya sauce to taste, and if you wish add more liquid to get the texture you prefer.
It goes perfectly with fresh vegetables, like mushrooms, cauliflower and tomatoes!
