Homemade Raw Bars

Aka the perfect way to destroy your hand blender!
But they are so tasty and filling!


3/4 cup dried apricots
1/4 cup dried dates / pineapple
1/2 cup raw almonds & hazelnuts
1/2 cup raw pecans & brazil nuts
lime zest
juice 1 lime
1 Tablespoon vanilla extract
In the bowl of your food processor (and please do not use a hand blender….), mix together the dried fruits and nuts. Process until the pieces are all uniform in size and a sticky dough has formed. Add the vanilla extract, lime juice and zest and process well until combined.
Pour the dough out onto some parchment paper and shape it into one large rectangular brick. Refrigerate it for 10 minutes and then slice the bar into 6/8 small rectangles. Keep your bars in the refrigerator (they can stay up to a week or more if frozen)
