I think it’s the best raw low fat mayo I’ve ever tasted and made!
1 and 1/2 cup raw cashews
1 tbsp olive oil
juice 1 lemon
6 tablespoons water
1 tsp mustard seeds
2 tsp mild curry
sea salt to taste
Combine all the ingredients in a high speed blender and blend until very smooth and creamy. Add more water if needed.
Transfer to a glass container and chill in the fridge for a couple of hours before serving.
Optional: add 1 date if you prefer a sweeter mayo.
