Peanut butter cookies

If you feel like a crunchy but soft inside cookie, voilà the perfect recipe! Your guest will raven even the crumbles! 🙂

175 g flour
130 g cane sugar
110 g margarine (room temp)
110 organic peanut butter (room temp)
1 tsp flaxseeds
50 ml water
4 tbsp sesame seeds
2 tsp vanilla extract
1 tsp apple cider vinegar
1 1/2 tsp baking soda
1/2 tsp nutmeg powder
1/2 tsp cinnamon powder

Preheat oven (165/170°C). In a large mixing bowl, beat together until smooth: vanilla extract, margarine, peanut butter, cane sugar, add in flax seed powder (previously mixed with 40 ml water), flour, baking soda, cinnamon, nutmeg and last but not least the apple cider vinegar and 3 spoons of sesame seeds and mix till your dough is creamy and detaches from the border of your bowl.
Roll your dough in balls, and flatten them lightly with a fork. Sprinkle with cane sugar. Bake for around 12-15 minutes and cool.

    • I’ve recently discovered the “power” of real peanut butter. I didn’t use it before in my recipes. I still remember when – as a baby – we were going to the USA army open market in Leghorn to get it, because it was not available in normal super markets at the time (Planters?? is it possible? … a peanut man with spectacles..)
