Nutty raw balls

Taking inspiration from Elaine‘s delicious Balls and Bars of Goodness, I  tried to prepare some picnic sweet snacks for my goblins, something different and healthy. This is the result: 20140507-173256.jpg INGREDIENTS:
70 ml maple syrup
Almond milk (a couple of tbsp)
110 g organic peanut butter
100 g puffed rice (I used puffed rice crackers…)
pinch salt
1 tbsp sesame seeds
20 g dried cranberries
1/2 tsp vanilla seeds

In a food processor put the puffed rice crackers and pulse until finely ground. Add the peanut butter, maple syrup, sesame, cranberries, vanilla seeds, salt  and pulse again (scraping the sides of your food processor if necessary) until well combined in a paste-type consistency (it doesn’t have to be sticky) . Add 1 or 2 tbsp of almond milk if you need make the mix more homogeneous.
Scoop out a heaping tablespoon, and squeeze into a ball using your hands. Repeat with the rest of the mixture, and place the balls on an unlined cookie sheet. Refrigerate for 1 hour.
PS: These raw balls can become even more appealing and naughty if, using a spoon, you drop one ball after the other into some melted dark chocolate. Roll them around to coat, then place them in the fridge for 1 hour … Enjoy!!!

  1. So glad you built on Elaine’s recipes – that must give her great pleasure. 🙂
I’m mystified by your poll results: what ‘other’ is there, do you think ?

    • She’s an inspiration! 🙂
as for ‘other’= maybe weightloss, live longer, feel stronger, have more energy….? what do you think?

      • Some people believe it’s possible :)) too many groovy things to eat, to slim down, I know… lol! 😉

      • I cut up half a magnificent rockmelon that arrived in my greengrocery delivery, and ate FAR TOO MUCH of it. Always my downfall. So you’re quite right ! 😀
