My granulated vegetable stock

All you need is a dehydrator… and 8 hours to prepare it!
Practical, genuine, quick, and ready to use to obtain a delicious stock perfect for enhancing the flavour of risottos, pastas, soups and many other dishes…
The good thing is that you can change the taste of your vegetable stock according to the season and mood: add some zucchini for example, different herbs, more or less tomatoes, take away the garlic if you don’t like it and add a leek! It will always taste better than the one you usually buy, it’s natural and preservatives free! 😉

INGREDIENTS:
1 red onion (thinly sliced)
1 garlic clove (thinly sliced)
1 carrot (thinly sliced)
2 firm red tomatoes (thinly sliced)
2 small potatoes (thinly sliced)
fresh herbs (I used thyme, chives, sage, rosemary, fennel)
2 tbsp nutritional yeast
1 tsp Curcuma

Put the sliced vegetables and herbs in your dehydrator for at more or less 8 hours (max temp), till completely dry and crunchy (see photos below). Whirl your dehydrated vegetable, add the nutritional yeast and Curcuma and store in a glass jar, well closed .
You can keep it for 6 months.
