My Gazpacho

Gazpacho has many things in common with a smoothie, it’s juicy, tasty, thick and cold! I love tomatoes and this is one of the many reasons gazpacho is my ideal summer “dindin” (a wink and a nod to my blog friend Patty). I eat it together with some crunchy seed crackers while the goblins are still running in the garden before sleep time! And of course, the Viking shares a bowl of this tasty tomato soup with me.

INGREDIENTS:

600 g tomatoes roughly chopped
1 red pepper
1/2 cucumber, peeled and roughly chopped
2 tbsp Olive oil
2 medium shallots roughly chopped
1/2 tsp cumin seeds
Salt, pepper,
2 tbsp red vinegar
Sesame seeds

Put the tomatoes, pepper, shallots, cucumber, cumin, vinegar, oil in a blender. Process until smooth.
Taste, adjust the seasoning with salt & pepper. Refrigerate till the moment you serve it. Garnish with sesame seeds.
