Mediterranean Soda Bread

Try this easy soda bread recipe for when you want bread in a hurry…
400 g organic flour
1 tsp maple syrup
2 tsp apple cider vinegar
1 tsp bicarbonate of soda
1 tsp salt
350 ml vegetable milk (I used rice milk)
50 gr sun dried tomatoes in olive oil (well drained)
1 tbsp dried herbs (oregano, thyme, basil)
sesame seeds – olive oil

NB: Vegan buttermilk does exist and is very simple to prepare: just add 1 tablespoon of lemon juice/apple cider vinegar per cup of almond, soy or any other vegetable milk of your choice, stir well and wait 5 minutes for the milk to become sour.

Preheat your oven (200°C).

This recipe is very very easy and quick!

In a small bowl, whisk together the vegetable milk and ac vinegar. Set aside to curdle to make vegan buttermilk.
In a large bowl, sift the flour, salt, and baking soda together.
Mix in the tomatoes, maple syrup and herbs.
Make a well in the centre of the dry ingredients. Pour in the buttermilk and mix until just combined.
Turn the dough onto a clean surface and form into a circular mound. Transfer to a baking sheet. With a sharp knife, slice almost all the way down in half, then in half the other way to quarter. Brush the surface with olive oile and sprinkle it with sesame seeds.
Bake for 30 minutes or until golden brown.
Transfer to a wire rack, cover with a clean tea towel (this keeps the crust nice and soft) and leave to cool!
Then… dig in!
I ate it with a cold soup of zucchini and sweet peas! D E L I C I O U S !
