I’m back!! And to celebrate September, the start of the school year (at least here in France!), a new beginning (for me at least, since for the first time in 5 years I’m home alone, since all the 3 goblins are now in the kindergarten) … I needed something sweet and summery… a lime cake!!
250g organic plain flour
1/2 tbsp salt
2 tsp baking powder
170g organic caster sugar
70 ml organic vegetable oil (I used rapeseed)
250ml almond milk
2 tsp apple cider vinegar
3 tsp maple syrup
zest of 2 limes
juice of 1 lime
2 tbsp organic sugar
Preheat the oven to 180C. Sift the flour, baking powder and salt into a large bowl. Mix through.
In a separate bowl, whisk together the sugar, syrup, oil, almond milk, vinegar, lemon juice. Stir in the lemon zest.
Pour the wet ingredients into the bowl with the dry ingredients. Stir until thoroughly combined. Pour the mixture into a greased plum cake mould. Bake for 40 minutes, or until a toothpick inserted into the middle comes out clean.
Meanwhile, place the juice of 1 lime in a small bowl with the granulated sugar. Stir to combine.
When the cake is baked, spoon the lime juice over the top of the cake. Cool for 20/30 minutes.
