Oatmeal banana cookies

wpid-wp-1413201548828.jpegHere’s my version of the well-known Healthy Oatmeal Raisin cookies, an alternative to cookies for your breakfast, if you want something quick and sweet to eat while training or for a guilty-free snack. They have no flour, no egg, no butter, no sugar (just 2 spoons of maple syrup which you can avoid to add).
If you want something richer you can add raisins, cranberries or even chocolate chips…


3 ripe bananas (mashed, I used a food processor for a smoother, creamy result)
2 cups of oats
1/3 cup sugar-free apple purée (or apricot/apple)
1/4 cup vegetable milk (I used rice milk)
Zest 1 lemon
2 tbsp Vanilla essence
1 or 2 tbsp maple syrup
1 pinch of cinnamon, 1 pinch salt

Mix together, oatmeal, mashed bananas, vanilla extract, lemon zest, vegetable milk, maple syrup and cinnamon.
Drop cookie dough in spoonfuls onto a cookie sheet. I made 15 more or less. Bake for 15/20 minutes (160°C°), until lightly brown.
Hot, they will be very soft, be careful when you move them on a cooling rack.
