Some days you just don’t have the time to prepare dinner, and you dream of the perfect recipe to make in less than 40/30 minutes…and still stun your hubby/wife/guests…
1 pre-made vegan puff pastry
3 ripe medium tomatoes
1 tbsp mustard ( old style with mustard grains if you have it)
Fresh herbs (chives, oregano, basil, thyme …up to you!)
2 tsp egg replacer
2 tbsp flour
1 cup vegetable milk
Salt olive oil
It’s really easy: lay the pastry in a quiche dish, and prick a fork all over. Blend tomatoes, herbs, mustard, veg milk, shallot, egg replacer, flour for 30/60 seconds, till creamy and fluffy. Adjust with salt, add 1 tbsp of oil (optional).
Pour the tomato cream onto the pastry and bake the quiche for 30 minutes (170*C) or until the crust is golden brown.
Perfect with a green leaf salad!
