Rum Caramel Sauce

This delicious caramel sauce is irresistible…you can eat it with a spoon or pour it over your ice creams, crêpes, pancakes !! It’s also a nice gift to offer (Xmas, dinner, to a friend…)


160 ml maple syrup
260 g cane sugar
75 g margarine
140 g rice/almond or soy milk
4 tbsp rum
1 tbsp vanilla extract
10 g arrow-root
1 tsp sea salt

Melt maple syrup and sugar in a pan, stirring often till it begins to bubble. Add the margarine.
Mix the arrow-root into the non dairy milk and add it to the sugar mixture.
Remove from the heat, add the vanilla, salt and rum and mix till silky and creamy.
You can pour it in a jar and can it, lowering your jar in boiling water for 15/20 minutes.
Refrigerate after opening!!
