My Cashew Spread

So simple and so creamy, a perfect appetizer for all your parties….!

200 g cashew nuts
1/2 cucumber
Juice 1/2 lemon
2 tbsp pickled capers
1 shallot
3 tbsp nutritional yeast
fresh basil (6 leaves or more)
1 tbsp oil
Salt or soy sauce to adjust

Blend everything together (you may need to occasionally stop and scrape the mixture off the sides back onto the blade). Make sure the nuts are well ground and the mixture is creamy.
Transfer to the fridge for half an hour to harden and enjoy! πŸ™‚

  1. And then you have to wonder, how some people absolutely have no idea what to serve vegans (many people we know can’t think of anything else but some olives and peanuts as an appetizer ;-),
    when there are so many yummie recipes!
