Two more amazing almond spreads!

I’m in a spread kind of mood lately, and I’m trying new flavours and combinations, taking inspiration from friend-bloggers and inventing new pre-dinner snacks to offer to my Christmas guests: I love it! And the more I love it the more I think about what “non vegan” friends often ask me: “If you don’t eat animal products, what do you eat?”. As if there were nothing edible apart from cheese and meat… If only you knew the universe of savoury possibilities I have, we have, and how many lovely discoveries I’m doing since almost 3 years now… I don’t regret a single day!

The first spread is a slightly different version of the wonderful Coriander Chutney of Shivaay Delights!! She has plenty of delicious recipes on her blog, don’t forget to go over her posts!
The second one is milder but really nice & creamy, try it on some veg, roasted bread or crackers!

Coriander and Basil (sort of) Chutney
INGREDIENTS
85 g almonds
1 bunch fresh coriander
1 bunch fresh basil
Juice 1 small lemon
1/2 green pepper
1 green chilli (mild)
2 tbsp oil
Salt to taste

Almond and Dill Spread
INGREDIENTS
40 g almonds
1/2 bunch fresh dill
1/3 cucumber
Juice 1 small lemon
2 tbsp olive oil
1 small shallot
2 tsp cane sugar
Salt to taste

For both:
Blend everything together (you may need to occasionally stop and scrape the mixture off the sides back onto the blade). Make sure the mixture is creamy.
Transfer to the fridge for half an hour to harden and enjoy! 🙂
