Cheesy Polenta Waffles

A simple but crunchy and extremely tasty recipe to wish you all a Happy New Year! A new blank book filled with recipes to write and share with you!

You can use them as bread together with a leafy salad, as snack (hot hot hot!), with some (vegan) cheese or appetizer with some nice sauce…you will love ’em! I have no doubt!

300 g fine milled polenta
1 l water (more or less)
1 pinch ground nutmeg
1 pinch ground black pepper
1 tbsp olive oil
6 tbsp nutritional yeast
1 pinch baking soda
salt to taste

Place water and polenta in a huge bowl. Stir til smooth. The consistency should be creamy, pourable but not runny, if too thick add more water. Add nutritional yeast, salt, nutmeg, pepper, oil and baking soda. Mix well.

Preheat waffle iron(s). Pour a few spoons of the polenta mixture into the center of the waffle maker. Close and cook for 10 minutes.
