These spicy snacks are (as all my recipes) very easy to prepare, you just got to get the hang of it, but as soon as you understand how to fold the phyllo or brik pastry, your samosas will be ready in no time. They are very nice with mango chutney.
2 tbsp olive oil
1 tsp mustard seeds
1 big red onion finely chopped
salt to taste
2 tsp curry powder
2 potatoes peeled and finely chopped
1 carrot, peeled and finely chopped
1 cup green beans chopped
1 cup of peas (fresh or frozen)
1 pkg phyllo/brik pastry
For the filling:
Heat the oil in a frying pan, add mustard seeds and toast them till they start to jump and pop. Add the onion and cook until the onion is lightly caramelized, about 6 minutes. Add the curry and fry for 1 minute. Then add the vegetables and 1/2 cup of water. Cook for 15 minutes over medium heat or until there’s no more water. Allow to cool.
Heat oven 170°C.
Unwrap the phyllo pastry and take about 2-3 layers of phyllo/brik. Using kitchen shears, cut phyllo/brik into three long strips. On one strip, place heaping spoonful of filling at strip’s end. Fold samosa into triangles, heading up the strip
Place finished samosa on baking pan

Cook samosas in the oven for 10-15 minutes, until they are brown and crispy!
