Lime Curd is something that is never the same when shop-bought! It’s a thick, soft and velvety cream that has a wonderful sweet citrus flavour. It can be used as a spread for scones & cookies but also as a filling for tarts and cakes. Its color is very bright, you almost feel like eating a ray of sunshine…perfect since Spring is just 3 days away…!!
2 organic limes
125 g organic margarine
10 g fresh ginger (grated)
135 g organic sugar
2 tbsp corn starch dissolved in 3 tbsp water
Put the zest of 1 lime, the ginger, the 2 lime juice, the sugar and the margarine, cut into cubes, into a bowl set over a pan of simmering water, making sure that the bottom of the basin doesn’t touch the water. Stir with a whisk from time to time until the butter has melted. Stir the starch and water into the lime mixture. Let the curd cook, stirring regularly, for about 10 minutes, until it is creamy and glossy.
Remove from the heat and stir occasionally as it cools. Pour into clean jars and seal. It will keep for a couple of weeks in the refrigerator.
