This is such a fantastic spread to have on hand for making a quick and healthy lunch or snack. The beans are so filling, and you can eat this cream with crackers, tortillas, spread it on toast, as a dip for celery, cauliflower or carrots….you name it!
I love its spicy touch, it is so simple, crunchy and keeps in the fridge for several days.
450 g red beans (canned or home cooked)
Tip of a teaspoon chili powder (add more if you like it hot!)
1/2 garlic clove
6/5 sun-dried tomatoes in olive oil
1 tbsp tahini
handful of crunched pistachios.
Tamari sauce to taste (optional just if you need to add salt)
Place all the ingredients – but the pistachios and tamari sauce – into the bowl of a food processor and process until well combined and completely smooth. Taste and add a bit of tamari sauce if needed.
Spoon the dip out into a bowl, and garnish it with the pistachios and a drizzle of olive oil.
