Another very easy but extremely tasty (and quite cheap) recipe, that will make you fall in love with cauliflower (if you are not already!!). I used a normal cauliflower and Romanesco its very psychedelic cousin: they have a very similar taste, but Romanesco has a slightly nuttier, earthier flavor. You can use it as you would cauliflower in recipes, and it holds up to many different cooking methods but it gives and extra ‘wow’ factor. 🙂
1 head medium cauliflower
1 head of Romanesco
3 cloves of garlic (minced)
Juice 1 big lemon + zest
Salt & Pepper to taste
Cut cauliflower and Romanesco into florets and put them in a huge bowl. Toss in the minced garlic. Sprinkle with lemon juice and drizzle with olive oil. Add the lemon zest, salt and pepper to taste. Mix well with your hands and set aside for 30 minutes.
Preheat oven (200°C).
Toss the florets in a baking pan and place it in the hot oven, uncovered, for 25-30 minutes, or until it is tender and lightly browning. Serve immediately with quinoa or rice.
