Indian-spiced Quinoa

How do you exactly pronounce QUINOA? [KEEN-wah] 🙂
High in protein and fiber, quinoa is not only versatile, it also tastes wonderful and has a nice crunch. This exotic, gluten-free recipe is delicious, easy to make and smells wonderfully while you cook it!
A 100 g serving of quinoa provides: 368 calories 14 g protein-6 g fat-64 g carbohydrate-7 g fibre


1 1/2 cups uncooked quinoa
3 cups water
2  garlic cloves, minced
3 tablespoons olive oil
1/2 tsp mustard seeds
1/2 tsp sweet paprika
1 tsp ground cumin
1/2 teaspoon ground turmeric
1 medium red onion, diced
Salt to tasteimageIn a large pan, pour the 3 spoons of olive oil over medium heat. Add the onion, mustard seeds, and paprika. Cook, stirring from time to time, until onion has softened. Add garlic and cumin and cook, stirring, for another minute. Add the quinoa, water, and turmeric. Stir until all of the ingredients are well combined and quinoa is heated through (10 minutes), then season with salt to taste and remove from heat.
Serve with vegetables! Enjoy!!
