Holy moly!! I think this is the most sumptuous vegan white chocolate I’ve ever tasted and once again I have to thank cashew nuts for the wonderful results!!! It’s extremely easy to prepare, dairy-free and doesn’t need any special equipment! You can eat it as it is, melt it on your desserts, break it in small chunks and use it as chocolate chips: I’m sure you’ll love it, it is absolutely delicious, creamy, sweet and addicting….:)
½ cup melted cocoa butter
½ tsp vanilla extract
½ cup powdered sugar
¼ cup raw cashew butter
2 tsp soy lecithin
A few drops of lemon essential oil
Melt the cacao butter in your microwave until liquified. Pour you butter into a bowl with the remaining ingredients and mix well until well combined. Pour onto a parchment paper lined baking pan, and place in the freezer for at least 30 minutes.
Break into pieces and enjoy!!!! It won’t last long…believe me!!
