Apple Roses

I’m sorry for the long silence and for the lack of inspiration I had in the last couple of months. Summer took away all my ideas and will to cook new things. But I’m back and I hope you’ll enjoy all the new recipes I’ve set aside for you!!
Today’s wonderful recipe is not mine but Manuela’s, I’ve just changed it a bit according to my taste, as usual! It’s such a nice dessert to offer for a dinner or a tea time with friends. It’s easy, quick and stunning! All your guests will wow and ask for more!

Ingredients:
1 puff pastry sheet (rectangular), you can either buy it or do it yourself -like I did -using Miyoko Schinner’s Glorious Butter
Juice of 1 lemon
Organic Cane Sugar
1 big tasty apple
(6 roses)

1 muffin mold
6 parchment paper coasters (that you’ll cut yourself according to the size of your muffin mould)

Preheat oven: 170°C.
Cut the apples in half, remove the core and cut the apples in thin slices (they will look like semi circles). If you have one, use a mandoline slicer! It’s perfect for this job! No need to skin your apple (and if you use a red apple your roses will be have a wonderful pinky nuance on the top!). Sprinkle your apple slices with lemon juice. Set aside.

Unroll the puff pastry, using a pizza wheel cut 6 strips (height 5 cm).  Place the apples on the dough like this:image
One apple “bridge” above the other, on the top half of your puff pastry strip.
Sprinkle with cane sugar (to taste!). Fold up the bottom part of the dough and carefully roll the puff pastry. Place the parchment paper coasters in your muffin mould and then the apple roses.
Using parchment paper will avoid any risk of your roses to glue to the borders because of the caramelised sugar.
If you prefer you can use a silicone mould but, I prefer tin ones, because I like my roses to have a crunchy bottom, not a soft one.
imageDo the same with the rest of your puff pastry strips.
Bake at 170°C for 25/30 minutes until golden. If the top of your roses gets too cooked, use an aluminium paper, cover your roses and wait for the puff pastry to be cooked.
Remove your apple roses from the muffin mould place them on a rack for 10 minutes.
