Served fresh from the oven while still warm, these scones are a unique & tasty treat. They are really easy to make and most people won’t notice they are vegan, until you tell them.
These savoury scones are great on their own, suitable both as an aperitif or for any time of the day!!
INGREDIENTS:
400 g potatoes peeled and cut into large cubes
100 ml rice milk
150 g organic flour
1 tbsp raising powder
3 tbsp olive oil
Salt to taste
Chopped basil (3 tbsp)
1 tsp dry onion
Bring potatoes to a boil in a pot of lightly salted water. Reduce heat, and simmer until fork tender, 10 to 12 minutes. Drain well.
Preheat oven (180°C).
In a bowl, mix together rice milk, olive oil and potatoes. Stir in flour, raising powder, salt and chopped basil. Mix well until a soft dough forms.
Flour your hands and shape it into 6/8 scones. Place them on a baking sheet lined with parchment paper. Cook for 30/35 minutes until golden! Leave to cool (or not…)and then enjoy!
