Creamy Champignon Soup

Yesterday I prepared a hearty and warming comfort soup! Not having a lot of time, I made it using my high speed blender: amazing! It’s raw, vegan, creamy, rich of flavours and can be made in less than 5 minutes!
You’ll love it. If you prefer you can also eat it cold, it’ll be a rich and delicious starter!
Mushrooms are low in calories, high in fiber, and contain selenium and many important vitamins! They also have many health benefits: anti-age benefits, they prevent cancer, strengthen our immune and also help protect us against cardiovascular diseases ! They are especially important to include in your diet if you are vegetarian, vegan, or gluten-free!

250 g mushrooms (I used cremini & button mushrooms)
200 ml unsweetened almond milk
handful of cashews
1/2 medium red onion
1/2 garlic clove
1 spoon of butterless butter
red peppercorn – pepper -Himalayan Pink salt

Place mushrooms into your blender, add almond milk, cashews, a couple of red peppercorns, onion, garlic and the butterless butter.
Blend until the soup is steamy hot (3/4 minutes it depends on your blender).
Taste, add some Himalayan Pink salt and a dash of freshly ground pepper.
