These seed bars are just soooo delicious! They are rich in minerals, proteins and fatty acid! Perfect for a post work out snack or a filling little sweet after a meal! Just one small advice: they ARE addictive!!
120 ml maple syrup
80 g tahini
60 ml coconut oil (melt)
130 g pumpkin seeds
120 g sunflower seeds
30 g sesame seeds
70 g dried blackberries/cranberries
60 g shredded coconut
vanilla extract – pinch salt
In a small bowl mix well maple syrup, tahini, coconut oil and vanilla until smooth and creamy, set aside.
In a medium-size bowl, combine remaining dry ingredients. Add in the maple syrup mixture and mix well, using a silicone spatula.
Press the mixture flat on a pan lined with parchment paper and place in the freezer until firm, about 30 to 60 minutes. Cut into bars and store in the refrigerator.
This will keep for one to two months in the refrigerator or freezer.
