These cookies are amazing, low in sugar, crispy on the outside and soft inside! A real no-guilt treat! You can have them for breakfast or enjoy them anytime throughout the week!
If you feel naughty and you would like them to be even more sumptuous, add some hazelnuts or dark chocolate chips!
2 cups oats
3/4 cup coconut oil or any neutral flavour oil/ margarine
1 & 1/2 cups kamut flour
2 medium apples (grated)
1 pinch salt
1 tsp cinnamon
1 cup almond milk
1/4 cup coconut butter
3/4 cup cane sugar
150 g of apple sauce or apple/peach sauce
Preheat oven (175°C). Line a baking tray with parchment paper.
In a small bowl whisk together the wet ingredients while in a large bowl mix together the dry ingredients. Pour the dry ingredients over the flour mix. Stir until you have a homogeneous and well combined dough.
Use a spoon and scoop out the dough on the baking sheet. Flatten the cookies, for them to have a nice “round” shape. Bake for 15-17 minutes or until golden and crispy.
